Default Thinking of replacing desktops with virtual desktops

I have a 12 workstation customer running SBS 2003. Five of the workstations
are now only accessed remotely using Remote Desktop. Those workstations are
running XP and need to be retired.

In our own business we have several remote desktop users running Win7 VMs on
our Hyper-V 2008 standalone that also plays host to our SBS 2008 and two
other 2008 R2 servers that run Dynamics CRM and SQL Server 2008. Our server
is a SuperMicro Intel 5000V chipset with a pair of Xeon 5130's and 16GB Ram.
In our case going to Hyper-V sped things up because previously we had the
Dynamics CRM webservice and SQL Server and SBS 2008 all running on the same
machine along with remote users using Terminal Services sessions.

I like the idea of Win7 VM's for the remote users because the experience
will be the same as though they were still remoting into a physical machine.
The remote users will use Outlook, browsers, Dynamics CRM Online, Excel and
Word.

We are thinking of replacing the customer's server with a Dell T610 with a
Xeon 5660 6 way single cpu. We are going to replace SBS 2003 with Server 2008
R2 because we now using Mailstreet Hosted Exchange. The 2008 server will just
be a file and print server. Is anyone here running Hyper-V on simliar
hardware with 5 Win7 vm's in addition to the above file and print server?

I'd also consider a Terminal Server instead of individual Win 7 desktops.
